We LOVE Extremadura but upon reflection, with your dates it may be cold & rainy as it’s the interior of central & initial north Spain with lots of hilly countryside, some mountains.
So how about southern Spain’s Andalucia + Spain’s semi-tropical Canary Islands? Better weather, Cultural Historic fun & Natural beauty + great food & wine (of course, this is still Spain 🙂
